White Lightning Chili

ingredients
all
1 white onion
chopped
2 tbsp olive oil
2 pkgs ground turkey
20 oz each
salt
to taste
2 tsp ground cumin
4 cloves garlic
minced
4 Anaheim chilies
roasted, peeled and chopped
2 cans cannellini beans
15 oz each
4 cups chicken broth
homemade or canned
4 tbsp flour
browned
fresh cilantro leaves
as garnish
cheddar or jack cheese
shredded, for serving

Tasty alternative to tomato-based chilis.

Preheat oil in a large pot and sautee onions until brown.

Add ground turkey and cook thoroughly, stirring continually.

Add salt, cumin, & garlic, and continue cooking.

Roast Anaheim chilies over a gas stove burner, place in plastic bag and wait about 5 minutes. Peel off the blistered skin, chop & add to chili.

Add beans & broth & stir well.

Brown flour in a heavy pan. Add to chili mixture. Continue simmering 15 to 30 minutes.

Serve with cilantro leaves, shredded cheese , fresh chopped onion
