Smoked Salmon and Cream Cheese Mini Frittatas

2 Tbs Cream cheese
1 Scallion

1 sprig Fresh dill
chopped
6 Eggs
Salt and pepper
2 thin Wild Smoked Salmon
sliced into small pcs
1 Tbs Capers
1 Lemon wedge
to serve
Avocado
sliced to serve

A very flavorful breakfast that's easy to make. For busy folks, this is a good meal prep breakfast. Just store in the fridge and heat in the oven for 10 mins or just until warm when you're ready to eat it. Consume within 4 days.

Set oven to 350F. Grease muffin pan / tray with butter. Set aside.

In a medium sized bowl, mix cream cheese, scallion and dill using a spatula until creamy.

In another bowl, whisk eggs and add salt and pepper. Transfer whisked eggs to cream cheese mixture and combine.

Put sliced Smoked Salmon and capers evenly into muffin pans. I used a jumbo size 6-count muffin pan from Sur La Table and divided the salmon and capers into 3.

Pour egg and cream cheese mixture into greased muffin pan.

Put in oven and bake for 23-25 mins. Serve with lemon wedge, avocado and microgreens. Salt and pepper to taste.
