miso clay pot chicken

1 tbsp miso
red or white
1 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp Shaoxing wine
1/2 tsp salt
1/2 tsp sugar
white pepper
1/2 tsp sesame oil
4 pieces chicken thighs
boneless skin on, cut into 1" pieces
8 whole shiitake mushrooms
1 cup jasmine rice
1 slice ginger
1/4" thick
1 cup chicken stock
or water
2 whole scallions
cut into 1" pieces
In a large bowl, whisk together the miso, oyster sauce, soy sauce, Shaoxing wine, salt, sugar, white pepper, and sesame oil.
Add the chicken and mushrooms and toss to coat.
In the pot of the rice cooker, combine the rice, ginger, and stock. Scrape the chicken mixture, marinade and all, on top of the rice.
Scatter scallions on top then cover and kick off the rice cooker.
Make sure that the chicken is done, otherwise cycle it again.
