|Grease a waffle iron and melt the coconut oil.|
|In a large bowl, whisk buckwheat flour, baking powder, baking soda and salt.|
|In a separate bowl, beat two eggs then add buttermilk, coconut oil, coconut sugar and vanilla extract.|
|Pour the wet ingredients into the dry ingredients and stir combine. Mixture should be a little runny.|
|Using a 1/3 cup measure, pour the batter onto hot waffle iron. Let cook for about 5-7 minutes until waffle is cooked through and adheres to one side of the iron or the other.|
|Top with fresh berries and serve.|
