Buttery Crisp Salad

ingredients
all
2 heads butter lettuce
hand torn into bite size pieces
2 ripe avocados
cubed into 1/4 to 1/2 inch pieces
2 lemons
to be freshly squeezed directly on greens
2 green onions (white and green parts)
thinly sliced
pepper to taste (either black or white pepper works well)
1/4 c sliced almonds
(or more to taste and texture preference)
sea salt to taste (flakes work best)
parmesean cheese (optional)
0.25-.5 c, grated

This delicious salad balances a variety of textures and tastes to create layers of refreshing flavor. The avocado and soft butter lettuce meld together when tossed to create a creamy texture, while the citrus of the lemon and almond crunch add a crispness to complement the soft greens. Onion, salt and the optional cheese, balance the sweetness of the butter lettuce without overwhelming the freshness of the greens. Light, refreshing and creamy, without the weight of a heavy dressing, make this salad an easy, go-to dish to eat on it's own, or as a course to compliment an entree.

In large bowl, hand tear cleaned butter lettuce leaves into bite size pieces.

Next, thinly slice green onions and cube avocados. Add these to lettuce greens.

Squeeze the juice of 1 to 2 fresh lemons onto the greens and avocado, primarily on the outer edges of the bowl, circling in toward the center of the greens as you squeeze. Add the majority of the sliced almonds, reserving a few to garnish the top of each salad serving.

Mix the salad fixings and lemon juice by delicately hand tossing the mix within the bowl. Add sea salt and pepper to taste.

Serve immediately in individual serving bowls topped with reserved almonds.

This salad is best served cold and immediately after preparing. One way to achieve this is to mix the salad in a chilled stainless steel bowl when preparing, followed by service of the salad in bowls that have also been pre-chilled.
