Plum Delicious Bran Muffins

3 medium plums
1 cup almonds
1 Tbs baking powder
1/2 Tbs baking soda
1 tsp ground cinnamon
1/2 tsp salt
3/4 cup oat bran
3/4 cup apple butter
2 eggs
1/3 cup dried prunes
1 drop stevia extract
A wheat-free and low-sugar treat. Prunes, plums, apple butter, and stevia are used to naturally sweeten these muffins. Oat bran, almonds, and eggs provide protein, fat, and fiber to help slow the absorption of sugars. The cinnamon is also helpful for balancing blood sugar. A great alternative to conventional muffins.
Preheat oven to 350° F. Lightly grease a muffin tin with coconut oil.
Bring a medium pot of water to a boil. Score bottom of plums and add to boiling water for 20 seconds. Remove plums and let cool. Remove skin and small dice.
Add almonds to a food processor. Pulse until almonds are finely ground to make almond flour. Measure 1 1/4 cup almond flour.
Sift almond flour, baking powder, baking soda, cinnamon, and salt into a large bowl and mix well. Stir in oat bran. Set aside.
In a small bowl, combine apple butter and eggs and mix until well blended. Stir in plums, prunes, and stevia.
Add moist ingredients to the dry and stir until just mixed.
Place about 1/4 cup of batter into each muffin tin and bake for about 25 minutes, until cooked through.
