Raw Thai Salad
ingredients
all
1 medium carrot
spiralized
1 medium zucchini
spiralized
1 cup red cabbage
shredded
1/2 cup capsicum
sliced
1/2 cup spring onion
finely chopped
1/2 cup edemame beans
defrosted
5 Tbs water
distilled
1 tsp red chili flakes
optional
1 tsp sesame seeds
toasted
1 tsp toasted sesame oil
2 Tbs tamari
1 tsp coconut sugar
1 Tbs tahini
2 Tbs natural peanut butter
1 lime
juice
1 clove garlic
2 Tbs peanuts
chopped
1/4 cup coriander leaves
chopped (or use mint)
This is a balancing meal that is easy to make and a delicious way to eat raw salad.

Add all salad ingredients in a bowl.

Place all dressing ingredients in a blender and process (should be runny). Taste and adjust to your liking.

Pour the dressing over the salad when you're ready to serve.

Chop peanuts using a mortar and pestle. Top salad with some chopped peanuts and fresh coriander
