Roasted Chicken Thighs

2 Chicken Thighs

Salt & Pepper

2 tbsp LMM Cooking Oil

Pan and oven roasted thighs are best.

Preheat the oven to 375.

Fifteen minutes prior to cooking, remove the chicken from the wrapping. Dry chicken with paper towels.

Season the chicken with salt and pepper.

In a large, ovenproof pan, heat oil over high heat. Add chicken skin down, leaving room between pieces.

After 5 minutes, check the skin to see if it's browning. If it is not lifting, it's not ready.

When browned, flip onto flesh side for 3 minutes.

Transfer to oven and cook for 15 - 20 minutes. It's ready when a meat thermometer reads 150 degrees or when pricked with knife if the juices runs clear.

Remove from oven (with a towel, the handle is hot!) and let rest for 10 minutes before serving.

With a little practice, you'll do this without checking the skin in the pan or pricking the skin in the oven.
