Seared Yellowtail w/ Arugula & Almond Salad

1 piece LMM Preserved Meyer Lemon
about 1 square inch
2 portions Albacore Tuna
salt
1 tbsp LMM Olive Oil
1/4 lb arugula
1/2 cup LMM Roasted Almonds
1 tbsp LMM Olive Oil

Though rare, we get in Yellowtail every so often. When we do, prepare this.

Cut flesh from inside preserved Meyer lemons. Discard the flesh (but reserve any juice). Slice the zest and pith into skinny strips.

Sprinkle salt on all sides of the fish. Heat pan. Add 1 tbsp of olive oil. When hot, add tuna and sear all six sides until lightly browned. Remove from heat.

Toss the arugula, almonds, 1 tbsp of olive oil, the preserved Meyer lemons and juice. Taste and add salt and pepper as necessary.

Spoon some aioli on each plate and place fish on top. Set the salad beside the fish.
