nolan's simple slow-cooked beef short ribs

4 whole beef short ribs
salt and pepper
28 oz San Marzano tomatoes
1 large can
1 head garlic
peeled into whole cloves
1 whole bay leaf
2 tsp whole red peppercorns
2 tsp green peppercorns
2 tsp black peppercorns

This hearty dish is perfect for a lazy Sunday when you want to create a delicious and aromatic home-cooked meal with almost no effort. The most important ingredient in this recipe is time. You will be astounded when ten easy minutes in the kitchen in the morning produces your favorite dinner of the season that evening.
Generously salt & pepper ribs after patting dry.
Sear in a well-preheated cast iron pan until well-browned on all sides.
Add all ingredients to slow cooker and cook on low for 8-16 hours.
When all the meat falls cleanly off the bone with no effort, it's done.
Serve over polenta, pasta, rice, or in lettuce cups.
