sardine salad
ingredients
all
2 tsp grated lemon zest
2 whole lemons
juiced
2 tsp Dijon mustard
4 tsp extra-virgin olive oil
2 tbsp fresh parsley
chopped
2 tbsp fresh basil
chopped
2 whole scallions
white and green part, chopped
2 stalks celery
diced
2 cans sardines
about 3.8 oz each, water or olive oil packed, drained
salt and pepper
to taste
lettuce or whole grain crackers

  • medium mixing bowl
  • whisk

Zest then squeeze the lemon into medium mxing bowl.

Add the mustard, then whisk the olive oil into the lemon dressing.

Mix in the parsley, basil, scallions, and celery.

Gently fold in sardines and season the salad with a pinch of salt and pepper.

Serve over lettuce or with whole grain crackers.
