Silver Dollar Coconut Banana Pancakes (Paleo)

4 each eggs
1 each banana
ripe
1/4 cup coconut oil
melted
1/2 cup coconut milk
1 whole vanilla bean
scraped
1 tsp vanilla extract
1 tsp baking powder
1/4 cup coconut flour
1 pinch salt
1/2 cup coconut oil
for cooking
1/2 cup shredded coconut
optional for garnish
1/2 cup macadamia nuts
optional for garnish
1/2 cup pecans
optional for garnish
1 cup blueberries
optional for garnish

In a food processor or blender mix together eggs, banana, coconut oil, coconut milk, vanilla bean, and vanilla extract.

In a large mixing bowl whisk together baking powder, coconut flour, and salt.

Pour wet ingredients over the dry in the mixing bowl and whisk together till just blended. (If to thick add a little more coconut milk)

Over medium heat grease large skillet or griddle with coconut oil.

Spoon silver dollar size pancake mixture onto greased skillet or griddle. Once bubbles begin to form on top, flip pancakes and cook on other side till cooked through.
notes
Average serving size is 4-5 pancakes.

If using the blueberries in pancakes then mix them into the batter prior to cooking as the pancakes become hard to turn over if not mixed in.

Top with honey or 100% pure maple syrup.
