1/2 cup fresh mango
peeled and chopped
3/4 cup fresh lime juice
1 tbsp red onion
minced
1 tbsp fresh cilantro
roughly chopped
4 large garlic cloves
minced
1 1/2 tsp jalapeño
minced
1/4 tsp tabasco sauce
sea salt
to taste
white pepper
to taste
2 lbs large fresh shrimp
uncooked, peeled and deveined 20-24 shrimp
6 each lime wedges

Sweet mangos, juicy shrimp and tart lime balance each other beautifully in this light dish - great for a quick meal or as an elegant appetizer!

In a large glass bowl combine all ingredients except shrimp and stir to combine with a silicon or rubber spatula.

Add shrimp, pinch of salt and white pepper, toss to coat with the marinade.

Cover with plastic wrap and refrigerate, tossing every hour until shrimp are opaque in color 4 hours minimum up to 12 hours.

Serve in a decorative bowl or chilled martini glasses with lime wedges.
notes
Carefully remove seeds from jalapeños for less heat and spice.
If making as a main course use approximately 6 shrimp per person, for snack or appetizer use 4 per person.
