Here's my Mom's pea soup recipe. She made it for me when I went through the radioactive iodine treatment for my thyroid cancer and I had no appetite.
|Put peas in a large pot and cover with water and then add about 3" more water.|
|Bring to a boil and then add onions, carrots, and parsnips.|
|Turn burner to med-low and stir often for about 30-45 min.|
|When peas are soft and starting to fall apart and make a thick broth, add the sausage.|
|Add salt and pepper to taste.|
Italian sausage doesn't work very well with the recipe.
