1 tbsp olive oil
1 whole onion
large in size, chopped
1 clove garlic
minced
1 tsp cumin
3 whole chicken breast
uncooked, cut into small pieces
1 can hominy
15 ounces, drained
1 can corn
12 ounces, not drained
1 can creamed corn
12 ounces,
2 cans green chiles
4 ounces each, Ortega brand, not jalapenos
2 cups chicken stock
1 tbsp oregano
not ground
1/2 tbsp chili powder
1 can canned tomatoes
15 ounces, redi-cut
8 oz salsa verde
cheese
cilantro
avocado
home fried corn tortilla strips

Slowly bring the dutch oven up to medium heat. Warm the olive oil, then cook the onions, garlic, and cumin until the vegetables are tender.

Add the chicken and saute.

Add the remaining ingredients and cook covered for 30 minutes.

At serving time, garnish with cheese, cilantro, avocado, and home fried corn torilla strips.
