penne with smoked salmon
12 oz tube-shaped pasta
such as penne, mostaccioli, or ziti
2 tbsp olive oil
1 whole shallot
small in size, thinly sliced
4 whole roma tomatoes
small in size, peeled, seeded, and chopped
2/3 cup whipping cream
1 pinch ground nutmeg
2 tbsp fresh dill
chopped or 1/2 teaspoon dry dill weed
1/3 cup vodka
6 oz smoked salmon
cut into bite-size strips
ground white pepper
fresh dill sprigs

My husband cooked me this dish on our 1st valentine's day!
Bring 4 quarts of salted water to a boil in a pasta pot. Cook the pasta to al dente for about 10-12 minutes. Drain in a colander or equivalent. Save 1/4 cup of the pasta water.
Heat the olive oil over medium-low in the stainless skillet. Cook the shallot, stirring often, for about 3 minutes until soft but not browned.
Mix in the chopped tomatoes, cover, and simmer for about 5 minutes.
Add the cream, nutmeg, dill, and vodka. Bump the heat up to high and boil for about 1 minute.
Add the pasta to the sauce and gently toss until the pasta is fully coated. Add a tablespoon or two of the reserved pasta water if needed to moisten the pasta.
Transfer the pasta away from the heat and add the salmon. Gently toss again to combine.
Season with white pepper. Garnish with dill sprigs.
