prosciutto pasta salad

2 lbs penne pasta
dry
4 tbsp seasoned rice vinegar
4 tbsp olive oil
2 tbsp lemon juice
salt
to taste
pepper
to taste
2 tsp dijon mustard
1/2 cup kalamata olives
sliced and pitted
1/2 cup sun dried tomatoes
chopped
1/2 cup corn kernels
raw
1/4 cup prosciutto
julienned or lean ham
white wine
chilled

A light pasta salad loved by all ages.

Boil pasta in salted water until al dente. Drain and let sit to cool.

Whisk the rice vinegar, olive oil, lemon juice, salt, pepper, and Dijon mustard for dressing.

Mix the pasta, olives, sun dried tomatoes, corn, prosciutto with dressing. Enjoy with a glass of chilled white wine.
